Presented is the hydrogel gelatin as cement replacement in printing mortar to enable higher degrees of freedom for constructions built with extrusion-based 3D printing. Gelatin composites have a temperature-sensitive rheo-logical behavior in the fresh state, improving the setting characteristics of the composite and thereby its buildability. It is shown that with a binder to sand ratio of 0.35 and a print temperature of 50°C, an 80° layer inclination and over-hang could be realized. The binder consisted of an 80%-w/v granulate-water mixture. Protein binders could be more environmentally friendly than portland cement due to their low extraction temperature of <100°C and side streams as a resource. The high degree of freedom in the building process reached with the material enables architecturally advanced and highly optimized designs.
